Processing method detail:
The entire collection of these fine coffee fruits has been done manually, selecting only the mature beans from the plant with a state of young maturity. These fruits, collected like any good special coffee process, were exposed to flotation to eliminate beans of low density and poor quality, after this, again the fruits were selected to obtain only those with the highest degree of quality, these cherries were then exposed to a parabolic dryer for a period of 25 days ensuring slow drying and guaranteeing a balance between the best notes of coffee that these fruits can deliver.
