Processing Method
Washed Process
At El Roble Coffee Farm, quality begins with carefully trained pickers who hand-harvest only the ripest cherries. Once collected, the cherries are taken to the on-site mill, where the transformation from cherry to green coffee begins.
A manual selection removes any under-ripe beans, and the remaining cherries are placed in water tanks to discard defective, low density beans through flotation. Next, the cherries are pulped, and the beans undergo 24 hours of clean-water fermentation to remove mucilage, enhancing flavor clarity.
Finally, the beans are slowly sun-dried on parabolic drying beds for 19 days, ensuring even drying and preserving their exceptional quality. This meticulous washed process produces a balanced, smooth, and high-quality Colombian specialty coffee, capturing the full character of El Roble’s terroir.
