Hacienda El Roble
In the heart of Santander, Colombia, on the breathtaking Mesa de los Santos, lies Hacienda El Roble, a true gem of Colombian specialty coffee. Surrounded by the majestic Chicamocha Canyon and located at 1,650 meters above sea level, this exceptional farm benefits from a clean, temperate climate and ideal growing conditions. Across its 330 hectares, Hacienda El Roble protects an extraordinary ecosystem, home to more than 160 bird species and 26 bat species, making biodiversity an essential part of its identity.
The Acevedo family has cultivated this land since 1872, blending generations of tradition with innovation. Today, under the leadership of Oswaldo Acevedo, the farm grows over 80 coffee varieties, including renowned cultivars such as Geisha, Mocca, and HR61 (Umpalá)—a name rooted in ancestral indigenous language meaning “where only the gods come.”
Hacienda El Roble is more than a coffee farm; it is a living ecosystem. Rare native trees such as Galopo, Coffee Walnut, and Guayacán provide shelter for wildlife, while 100% organic farming practices preserve soil health and water sources. The farm is certified by USDA Organic, Rainforest Alliance, and the Smithsonian Migratory Bird Center, and uses biological pest control supported naturally by birds and bats to maintain ecological balance.
The farm’s flagship coffee, Mesa de los Santos, is internationally celebrated for its sweet, smooth, and refined profile, enjoyed in markets such as Japan, the United States, and Australia. Processing Method
Washed Process
Quality at Hacienda El Roble begins with careful harvesting. Trained pickers selectively hand-pick only fully ripe coffee cherries. After harvest, cherries are processed at the on-site mill, where a manual selection removes under-ripe beans.
The selected cherries undergo a flotation process to eliminate defective beans before being pulped. The coffee is then fermented in clean water for 24 hours to remove mucilage, followed by slow, natural drying on parabolic drying beds for 19 days. This meticulous washed process preserves clarity, balance, and the refined character that defines El Roble’s exceptional coffees.
